Project
Daitaiya Ⅱ
Summary
This project explored what it means to eat and live, based on the concept of substitute food—a vital component of Japanese food culture since modern times. Through research on the ecosystem, history, and cuisine of Shibuya, a highly urbanized area of Tokyo with no agriculture, the project searched for what influences food today. The results were presented publicly in the form of an exhibition, participatory food performance, and dedicated website. The process of the research involved holding workshops on harvesting insects and foraging for weeds, and reflecting on technology for procuring and producing substitute ingredients in Shibuya. In this way, the project created new opportunities for participants and members of the public to learn. The culmination of the project was the performance, which served dishes made with substitute ingredients and cooking methods, and explored approaches to technological alternatives that transcend binaries of real and fake, and natural and artificial.
